JOBBIE Peanut Butter Pumpkin Cocoa Sweet Potato Mooncake

7 ingredients, less than 200 calories, halal/no lard, no baking or 9999 steps, not cloyingly sweet, doesn't cost a fortune... if Peanut Butter and Cocoa alone isn't enough reason for you to try this healthier mooncake!
Soft and chewy mooncake skin made with mashed pumpkin that resembles snowskin when served cold, enclosing a lightly sweetened filling made with minimal amount of sugar consisting of Sweet Potato, Cocoa, and JOBBIE Creamy Classic Peanut Butter. This is definitely THE mooncake that you can binge to your heart's content!👌🏻
Recipe makes 9 x 90g mooncakes
- Pumpkin (Steamed & Mashed), 365g
- Glutinous Rice Flour, 165g
- Confectioners Sugar, 30g
- Milk Powder, 25g
- Mix all ingredients together.
- Divide to 9 pcs (60g each). Set aside while preparing fillings.
PB Cocoa Fillings
- Sweet Potato (Steamed & Mashed), 170g
- JOBBIE Creamy Classic Peanut Butter, 85g
- Cocoa Powder, 20g
- Condensed Milk, 20g (Optional)
- Mix all ingredients.
- Divide to 9 ball (30g each).
- Brush mooncake mould with oil.
- Flatten mooncake skin dough.
- Place filling in center. Wrap tightly enclosing fillings.
- Shape with mooncake mould.
- Steam at medium low heat* when water starts boiling for ±7 min.**
- Let cool and serve.***
*Do not steam at high heat or mooncake will expand/spread to the side and loses its pattern.
**Do not over steam or dough will be overly soft.
***Store in fridge for a snowskin-like texture mooncake or if not finished within the day.
